I love guac but i have never been a really big fan of big slices of avocado. This recipe is so good, even my son who doesn't like "chunks" in his food liked this.

Snow day, November 12
- slept in til 9:30
- yoga
- shoveling
- lunch, chicken noodle soup & grilled cheese rolls (picture at the bottom)

- did homework for two classes that needed to be submited by 5pm
- laundry
- ventured to the gas station, first time i have driven anywhere since Monday - weird

- caught up on my SOA
- Kathy C. tried booking our Vegas trip...whoa what a hassel for her
- worked on art project for class
- relaxed here and there, so wonderful
- started another "slide"project

Peach dessert

1 large can of sliced peaches in syrup (don’t
drain)

1 pkg. Butter pecan cake mix
·
1 ½ sticks of butter, melted
Pour peaches in a greased 9x13 pan (sometimes some
peaches are bigger than others so I cut them in half). Pour dry cake mix over
the peaches. Drizzle melted butter over cake mix.
Bake 30 – 40 minutes at 350. Serve with cool whip or ice

chicken pot pie stew
I skipped the garlic salt and celery salt. I only added 2 bouillon cubes (the cream of chicken soup has enough sodium that is why i skipped all this). I made a batch and a 1/2 and it was too much for my crock pot once I had to add the bag of mixed vegetables. I just scooped 1/2 out and added 1/2 of the bag of mixed veggies. I added the remaining veggies to the bowl of extras and put it in the freezer for later.

couponing
I saved $46.76 with coupons today! I tease my kids that i am going to become an extreme couponer. Aubri graduates in May, i won't have anyone to follow around to watch sporting events. Both boys are working and going to school and aren't home much. Sheena is getting married in September and will be moving downstate. I will have time on my hands to think about meals for the week and clips coupons. i am going to start picking up the sunday paper too for coupons.

un-fried fried chicken
I haven't made this but i will try soon, I can't give credit because i don't know where i got this from, sorry
Dredge it in a little flour, lots of parmesan cheese, lawrey's/garlic powder/pepper (I shake it all up in a ziplock). Place skin down in a buttered or sprayed glass casserole dish. Bake for 30 minutes on 375 and then flip and bake another 30 minutes until golden brown and crispy. So yummy!

I've tried it with other chicken parts but thighs work the best. Light on flour, heavy on parm. Like 1 part to 3. We like lots of lawreys and pepper too but season to personal taste. It's definately a recipe you can play with on seasonings

6 cups Golden Grahams
6 cups Corn Chex
1 medium bag (about 2 cups) mini m&ms
1/2 cup sliced almonds
3 cups shredded sweetened coconut
1 cup light corn syrup
1 cup granulated sugar
3/4 cup butter
Mix cereals, coconut, almonds and m&ms together in a large paper grocery bag. Melt butter, sugar and corn syrup in a saucepan over medium high heat. Let boil for 2 minutes. Pour evenly over mixture and stir. Close bag and shake until evenly covered.
